Braised Indian Mackerel Fish with Bamboo Shoots (Cá Bạc Má Kho Măng)

Ingredients:

3 Indian mackerel fishes
400g baby bamboo shoots
1 bunch of spring onion (use ONLY white parts)
Fish sauce, chili, pepper, sugar, salt.

Process:

Step 1: Clean fishes with salt and wash again with water. Slice some lines on their bodies, apply a little salt on their bodies and wait in 15 minutes. Peel off the harsh part of bamboo shoots. Boil in hot water to reduce all poition from it. Wash many times with water and wait to get dry.

8 chicken legs or 1 whole chicken
2 lemongrass cloves
1 bunch of chive fruits
1 teaspoon saffron powder
Peanut oil,  cashew color
4 boiled eggs
500ml chicken broth
Cilantro, roasted peanut, grilled sesame cracker
Quảng noodle
Herb leaves, baby cabbage
Sliced salad, banana flower (sliced small and thinly)

Process:

Step 1: Marinate chicken with salt, sugar, pepper, fish sauce, sliced purple onion, chili powder. Mix well and wait for 1 night.

500g feather-back fishes (scraped)
1 bunch of spring onion (white part)
1 garlic
½ tablespoon Maggie Seasoning Powder
¼ tablespoon fish sauce, salt

Breads
Vietnamese mint herbs
Black boy sauce, chili sauce.

Process:

Step 1: Marinate scraped feather-back fish with all spices, use spoon to mix well until it is smooth and thick like into one cube. Roll into small balls and press gently into medium thin shapes.
