Cassava Vermicelli Soup with Egg Wonton Recipe (Miến với Hoành Thánh Trứng)


In winter, never better when you can enjoy a hot soup bowl with your beloved family. That is why my mom cooked Cassava Vermicelli Soup with Egg Wonton (Miến với Hoành Thánh Trứng) for us. Cassava Vermicelli Soup with Egg Wonton (Miến với Hoành Thánh Trứng)

Ingredients:

*** For filling of wonton:
400gr grinded pork meat
20gr spring onion
30gr shiitake mushrooms, soaked into cold water about 30 minutes and cut off the roots
30gr fresh bamboo shoot, soaked into cold water about 30 minutes and minced
200gr napa cabbage
7gr fresh ginger, cleaned and peeled
7gr corn starch
10ml soy sauce
5ml oyster oil
6 eggs.

*** For main dish:
400gr cassava vermicelli
300gr napa cabbage, cleaned and sliced small
200gr fish balls
3 slices tofu, sliced into cubes and fried
15 fried quail eggs/ 15 pork meat balls
50gr shiitake mushrooms, soaked and cut into half
100gr Vietnamese ham, sliced into small cubes
Pork Broth.

Process:

Step 1: Clean spring onion, slice small. Then, continue slice small shiitake mushrooms + minced fresh bamboo shoot + minced napa cabbage + ginger  for filling of wonton. Mix them together.

Step 2: Pour grinded pork into bowl, add mixture (in step 1) and marinate with soy sauce + oyster oil + pepper + corn starch.

Step 3: Mix them together and wait about 30 – 45 minutes.

Step 4: Add eggs into big bowl, stir well and season to suit your flavor.

Step 5: Add oil into pan, wait to hot, then scoop 2 tablespoons egg (10ml) into pan and fry until it is nearly cooked, add filling (in step 3) on the left part of egg.

Fried Sweet Potato with Shrimp Cake Recipe (Bánh Tôm Khoai Lang Chiên)

350gr bread crumb
700ge sweet potatoes
35gr fresh shrimps (medium size)
Salt
Saffron Flour
Vegetables
Sweet and Sour Sauce (Follow the instruction below).

Step 3: Pour bread crumb into big bowl with ¼ teaspoon salt + ¾ teaspoon saffron flour. Then, mix them together. Next, pour more 425ml water and stir well.

Scallop Congee (Cháo Sò Điệp)


Scallop Congee (Cháo Sò Điệp) is one of my most favorite cooked congee for weekend lunch. It is also one of Best Vietnamese Food in our country. Okay, make Scallop Porridge for those who are more familiar with the word porridge. Actually, it is the same and whichever name you call it, it will still taste as good though I suspect the word “congee” sounds much more sophisticated and refined to be used.

For this Best Vietnamese Food, I use dried scallops which I purchase from the wet market. You can get them from supermarkets and some Chinese herbal shops or even, dried sea produce. I use those which are relatively small in size – perhaps about the size of half popcorn as they are cheap and easy to cook.

In the picture above, the scallop congee appears white in color. I have a habit of eating my scallop congee with an egg. What I would do is to break an egg into the bowl and pour boiling congee over it before giving it a good stir. The egg gives the congee a much smoother texture and definitely tastes better.

5 Big fresh shrimps
Spices: salt, Maggi’s stuff, chili powder, vegetable oil
5gr Spring onion, cleaned and sliced small
Wood sticks.

Process:

Step 1: Clean shrimps carefully with water added a little salt in 2 – 3 times. Wait to dry. Cut off the legs and antennas of shrimps.

Step 2: Mix 1 teaspoon salt + ½ teaspoon chili powder (you can add more, it depends on your flavor) + ½ teaspoon Maggi’stuff + 1 teaspoon vegetable oil together. Use knife to cut across one line on each shrimp, and spread this mixture on them.

Step 3: Pin shrimps straight to wood sticks. Put them on tray added paper; bring to grill at 180 degree in 10 minutes.

Fried Pho Noodle (Phở Chiên Phồng)

There is one restaurant which located on 48 Tran Nhan Tong. It is not really big or beautiful. It has small banner and some tables which are put on the street. However, it is always crowded due to the customers come there frequently until the last dish is sold. The most popular dish there is the Fried Pho Noodle. The cookers will cut the noodles as long small pieces and then he put all of them into the hot oil pan.
