Steamed Red Sticky Rice with Mung Bean Recipe (Xôi Gấc Đậu Xanh)


One of my favor Vietnamese Dessert Recipes is Steamed Red Sticky Rice with Mung Bean (Xôi Gấc Đậu Xanh). For me, it is the best combination. If you have a chance to taste it, I bet you will never forget it. Gac Fruit has many other names such as baby jackfruit, sweet gourd or cochinchin gourd. This dish is usually served at many special occasions as Engagements, Weddings and even in Lunar New Year. If you love Vietnamese Food, this is one of dishes you should not miss.

Ingredients:

250gr Sticky rice
1 Gac fruit
100ml White wine
100gr Mung Bean (No cover)
80gr Sugar.

Process:

Step 1: Clean sticky rice in 3 times. Then, soak into water about 8 – 10 hours.

Step 2: Cut haft Gac fruit, use a spoon to scoop all meat and gac seeds into a clear bowl. Then, add more white wine into bowl and use your hand again to crush. Stir well. (mixture A).

Vietnamese Sweet and Sour Sauce Recipe (Sốt Chua Ngọt)


For me, Sweet and Sour Sauce (Sốt Chua Ngọt) is one of my favot sauces in Vietnam. Most Vietnamese main dishes are required use this sauce in meals. So I think I should write about its recipe for you who want to cook Vietnamese Food for your family and friends. Is is also one of Easy Vietnamese Recipes for you. Trust me, it is not difficult as you think if you follow my steps carefully.

There are some basic steps to create one of Easy Vietnamese Recipes. Follow my instructions below and you will not regret about it. Let us cook now.

Ingredients:

1 can of tomato (100gr)
3 tomatoes
1 bowl of broth or 1 coconut fruit
1 tablespoon tapioca starch
2 tablespoons annatto seed flour
3 tablespoons sugar
2 tablespoons vinegar
1 teaspoon salt
1 tablespoon minced garlic
2 tablespoons soy sauce
1 tablespoon vegetbale oil.

Process:

- Tomatoes: Clean, then throw away the seeds and mince them.
- Tapioca Starch: Mix it + 2 tablespoon cold water together. Stir well.

*** Cooking:

- Wait the pan hot, add 2 tablespoons oil + minced garlic and fry until its color turns yellow.

Steamed Chopped Crab Meat Recipe (Chả Cua)

200gr crab meat
300gr half lean half fat pork meat
20gr dried chinese vermicelli
3 yolks + 5 Jelly’s ear mushrooms
1 tablespoon tapioca starch
1 mould (diameter: 20cm)
Spice: pepper + salt + sugar + garlic + chili + purple onion + sesame oil + oyster oil + monosodium (optional)
Cilantro, vegetable oil, soy sauce.

Process:

*** Prepare:

- Crab meat: Check again to guarantee there is no bone into meat.
- Pork meat: Clean and mince it.
- Chinese Vermicelli: Soak into cold water about 5 – 10 minutes. Then, slice into 1cm for each piece
- Jelly’s ear mushroom: Soak into cold water about 5 – 10 minutes. Cut off the root, slice thinly
- Purple onion + garlic: Peel off the cover, and mince (5 cloves for each)
- Cilantro: Clean and slice small.

*** Cooking: Like previous posts, before cooking, I always want to say again that you should not neglect when cooking one of amazing Vietnamese Dish Recipes.

Step 1: Mix crab meat + pork meat + chinese vermicelli + 2 yolk + sliced jelly’s ear mushroom + purple onion + garlic + pepper + salt + sugar + 1 teaspoon sesame oil + 1 teaspoon oyster oil + 1 tablespoon tapioca starch together. Stir well.

Vietnamese Mung Bean Dumplings (Bánh Khúc)


It could be no weird for the Northern people when hearing the cry of seller about one Traditional Vietnamese Food in the city. It is Vietnamese Mung Bean Dumplings (Bánh Khúc), one amazing cake of Vietnam. The cake is a rice ball made of sticky rice mixed with cudweed which is most important ingredient and filled with mung bean paste, pork, and spices.

Cudweed grows during Lunar January and February, when the drizzling rain lasts all day, and it can be found along the edges of rice fields. There are two kinds: “Nếp” and “Tẻ”. The latter is more flexible and fragrant and is preferred for making the cake.

To make this Traditional Vietnamese Food, the cudweed firstly is washed, ground and then mixed with husked sticky rice. Mung beans, that are flayed and turned into paste after being cooked, are then added to the mixture. Finally, the cakes are sprinkled with grains of steamed sticky rice.

2 carrots
1 avocado

Step 3: Marinate octopuses with mixture in step 2 +2 teaspoons honey + minced garlic + oil + salt and put in fridge about 3 hours.
